 Meethe Chawal (Sweet Rice) 
Ingredients
  • 1 cup Basmati rice
  • 1 1/4 cup Sugar
  • 2 tablespoons Ghee
  • 4 Cardamoms (green)
  • 6 Cloves
  • 1 inch Cinnamon
  • 25 Raisins
  • 10-12 Almonds
Method
Boil the rice in a pan (not fully cooked - the grains should be slightly hard). Drain the water and keep aside. Heat ghee in a pan, add cardamoms, cloves, cinnamon and cook for 5 minutes.

In another pan, heat the sugar with 2 1/2 cups of water to make a one string consistency syrup.

Pour the sugar syrup and spices over the rice and stir gently on a high flame for 10 minutes, then lower the flame and cookfor another 5 minutes by which time the rice will have got soft and cooked.

Garnish with raisins and almonds. Serve warm.
