 Mysore Vadai 
Ingredients
  • 1/2 cup rice flour
  • 1/2 cup fine semolina
  • 1/2 cup plain flour
  • 1/4 cup ghee
  • 4-5 green chillies
  • 2 medium-sized onions
  • Coriander leaves
  • 1/2 teaspoon asafoetida powder
  • Salt (As per taste)
  • Water
Method
Sift rice flour, semolina and plain flour into a large bowl. Add remaining ingredients, minus water, and mix well. Add sufficient water to make a stiff batter. Combine well.
Heat oil in a deep-fryer or deep saucepan. Take a ladleful of batter and place it on the palm of one hand. Wet your other hand with water and flatten the batter with this hand.

The vadai will be shaped like a doughnut, and about the same size as one. Slip gently into the oil.
Deep-fry until golden brown and crisp. Drain vadais on brown paper or absorbent kitchen paper. Continue this process until all the batter is used.

Serve hot with mint chutney.
