 Thotakoora (Amaranth curry) 
Ingredients
  • 2 medium Onions
  • 2 Green chillies
  • 1/4 teaspoon Turmeric powder
  • 2 tablespoon Grated coconut
  • 1 tablespoon Black gram
  • 1/2 teaspoon Mustard seeds
  • 1 Red chilli
  • 1 tablespoon Oil
  • 4-5 bunches Amaranth
Method
Slit the green chillies. Cut the red chillies into small bits. Wash amaranth (chawla bhaji), drain the water completely and chop it finely.

Heat oil in a pan and add black gram (urad dal), mustard seeds and red chilli pieces. When mustard starts crackling, add chopped onion and green chilies. Fry for a while and put the chopped vegetable, salt and turmeric powder. Mix well and allow it to cook on low fire for about 10 minutes, stirring it from time to time.

Cook on a high flame if there is too much water. When the water is completely absorbed, add grated coconut and mix well. Goes well with rice.
