 Amrud ki Sabzee 
Ingredients
  • 1 kg Amrud (guava)
  • 1/2 cup Desi ghee
  • 2 tsp cumin seeds
  • 1/2 cup Tomatoes (chop)
  • 3/4 cup Yogurt
  • 5 tsp coriander powder
  • 2 tsp Red chili powder
  • 1 turmeric powder
  • 2 tsp Amchoor (mango powder)
  • 2 tsp fennel powder
  • 1/4 tsp black cardamom powder
  • 1/4 tsp cumin powder
  • 1/3 cup Sugar
  • 2 tbs Lemon juice
  • A pinch of asafetida
  • A pinch of black rock salt powder
  • Salt (As per taste)
Method
Put yogurt in a bowl, add coriander, red chilies, turmeric and salt. Whisk until homogenous.

Melt ghee (clarified butter) in a handi (pan), add cumin seeds, stir over medium heat till they begin to pop, add asafetida and stir until the moisture evaporates.
Then add tomatoes and stir fry until fat leaves the sides. Remove pan from heat, stir in the yogurt mixture and stir fry until the moisture evaporates. Now add guava (peel, quarter, seed and halve), stir, add water (Approx. 240 ml or 1 cup) and bring to a boil. Reduce to medium heat and cover and cook, stirring occasionally, until tender. Add the remaining ingredients except lemon juice, stir continuously for 5 minutes, add lemon juice, stir and adjust the seasoning.
