Goda Masala (Maharastrian spice for lentils and vegetables)
Ingredients
  • 500 grams Coriander seeds
  • 350 grams Sesame seeds
  • 100 grams Red chillies
  • 50 grams Cumin seeds
  • 25 grams Shahjeera
  • 25 grams Cassia buds
  • 25 grams Asafoetida
  • 20 grams Cloves
  • 20 grams Cinnamon
  • 20 grams Turmeric
  • 15 grams Bay leaves
  • 15 grams Dagad phool
  • 10 grams Peppercorns
  • Oil
Method
On a lightly oiled tawa roast each ingredient, one at a time, until it emanates a toasty aroma. This helps it release its natural oils, and can take anywhere from one to five minutes each, depending on the ingredient.

When cool, grind into a fine powder and store in a dry, airtight jar and add as per recipe requirement.
