Dosai (Rice Pancakes)

Ingredients
|
- 3 cups Raw boiled rice
- 1 cup Black gram dal
- 2 teaspoons Fenugreek seeds
|

Method
Soak the parboiled rice in water for 6-7 hours. Soak the dal with the fenugreek seeds for 6-7 hours. Grind the rice and dal separately to make a smooth batter.

Mix the batters together, add salt and set aside for at least twelve hours or till the mixture ferments (the batter will rise and will be double the initial volume). Stir it gently once.
Heat a griddle. Sprinkle a few drops of water, if it sizzles it is ready to use.

Smear 2-3 drops of oil all over the tawa and allow to smoke. Lower the heat and pour one ladleful of the batter and quickly smear into an even pancake. Slightly increase the heat and cook till golden brown in colour. Carefully turn the upside down and cook the other side for 1-2 minutes.
Serve hot with chutney and sambhar.
