Dry Roast the Spices
6 minsIn a dry pan over medium heat, roast all the spices (except coconut) until fragrant and slightly dark, about 3-4 minutes. Add grated coconut and roast for another 2 minutes. Cool completely.
Grind the Masala
5 minsTransfer the roasted spices and coconut to a blender. Add a little water and grind to a smooth paste. This is your Chettinad masala - the soul of the dish.
Cook the Onions
15 minsHeat oil in a heavy-bottomed pan. Add curry leaves and let them splutter. Add sliced onions and cook on medium heat until deep golden brown, about 15 minutes. Don't rush this step.
Add Aromatics and Tomatoes
12 minsAdd ginger-garlic paste and sauté for 2 minutes. Add tomato puree and turmeric. Cook until oil separates from the masala, about 8-10 minutes.
Add the Chettinad Masala
5 minsAdd the ground Chettinad masala paste. Mix well and cook for 5 minutes, stirring frequently to prevent sticking. The kitchen will be incredibly aromatic.
Cook the Chicken
30 minsAdd chicken pieces and coat well with the masala. Add salt and 1/2 cup water. Cover and cook on medium-low heat for 25-30 minutes until chicken is tender and gravy has thickened. Garnish with coriander.

- Kalpasi (stone flower) is a traditional ingredient if you can find it
