Prepare the Batter

In a bowl, mix besan, semolina, curd, turmeric, ginger-chili paste, sugar, and salt. Add water gradually to make a smooth, medium-thick batter. Let it rest for 15 minutes.

Set Up Steamer

10 mins

Grease a dhokla plate or thali with oil. Boil water in a steamer or large pot. The water should be vigorously boiling before you add the batter.

Add Eno and Pour

2 mins

Add Eno to the batter and mix quickly. The batter will become frothy. Immediately pour into the greased plate and spread evenly. Don't delay this step.

Steam the Dhokla

20 mins

Place the plate in the steamer. Cover and steam on high heat for 15-18 minutes. Insert a toothpick to check - it should come out clean. Let it cool for 5 minutes.

Prepare the Tempering

3 mins

Heat oil in a small pan. Add mustard seeds and let them splutter. Add curry leaves, slit green chilies, and sesame seeds. Pour this tempering over the dhokla.

Cut and Garnish

5 mins

Cut the dhokla into squares or diamond shapes. Garnish with grated coconut and fresh coriander. Serve with green chutney and sweet tamarind chutney.

  • Sour curd is essential for the tangy flavor and fluffy texture
  • Add Eno just before steaming for best results
  • Don't open the steamer lid while cooking
  • For extra soft dhokla, add 1/4 cup water on top after steaming
