Ghari Roti

Traditional Himachali bread, (optionally stuffed with urad dal filling) - a hearty mountain comfort food.

Ferment the Dough

10 hrs

Mix flour, salt, and water to form a soft dough. Cover and leave it in a warm place for 6–10 hours (or overnight). In colder climates, fermentation may take longer.

Shape Roti

15 mins

Divide dough into balls. Roll plain thick rotis. Optional: Place filling in center, seal and flatten gently into thick rotis.

Cook

15 mins

Cook on hot tawa with ghee on both sides until golden brown and cooked through. Serve hot. Optionally, you can deep fry the rotis as well.
