Ferment the Dough
10 hrsMix flour, salt, and water to form a soft dough. Cover and leave it in a warm place for 6–10 hours (or overnight). In colder climates, fermentation may take longer.
Shape Roti
15 minsDivide dough into balls. Roll plain thick rotis. Optional: Place filling in center, seal and flatten gently into thick rotis.
Cook
15 minsCook on hot tawa with ghee on both sides until golden brown and cooked through. Serve hot. Optionally, you can deep fry the rotis as well.
