The Story Behind Haah Joha Kumura
This duck curry is a festive specialty in Assam, often prepared during Bihu celebrations and weddings. The combination of duck meat with ash gourd creates a unique balance of rich and light flavors.
Ash gourd absorbs the duck's flavors while keeping the dish from becoming too heavy - a perfect example of Assamese culinary wisdom.
