Marinate Duck

30 mins

Rub duck pieces with turmeric and salt. Let marinate for 30 minutes.

Sear Duck

15 mins

Heat mustard oil and sear duck pieces until golden on all sides. Remove and set aside.

Cook Aromatics

10 mins

In same oil, add whole spices. When fragrant, add onions and cook until golden. Add ginger-garlic.

Add Duck

45 mins

Return duck to pan. Add yogurt and cook on low heat, stirring. Add water to cover and simmer until almost done.

Add Vegetables

20 mins

Add ash gourd and potatoes. Cook until vegetables are tender and duck is falling off bone.

Finish

5 mins

Adjust seasoning. The gravy should be medium thick. Garnish with coriander.
