Prepare Rice

Cook par-boiled rice until fluffy. This is the base of the Sadya.

Make Sambar and Rasam

1 hr

Prepare traditional sambar with vegetables and tangy rasam. These are essential.

Cook Avial

45 mins

Mixed vegetables in coconut and yogurt - the signature dish. Cook vegetables, add ground coconut and curd.

Prepare Olan and Erissery

45 mins

Make ash gourd in coconut milk (olan) and pumpkin-bean curry (erissery).

Make Accompaniments

1 hr

Prepare thoran, pachadi, kichadi, and other sides. Fry papadam and banana chips.

Arrange on Banana Leaf

15 mins

Place banana leaf with tip to the left. Arrange dishes in traditional order. Serve rice in center.

The Story Behind Sadya

Sadya is the traditional vegetarian feast of Kerala, most prominently served during Onam, the harvest festival. The word "Sadya" means banquet in Malayalam, and a full Sadya can have 24-28 dishes.

The meal is served on a banana leaf placed with the narrow end to the left. Each dish has a designated position on the leaf, and there's a specific order in which the food is eaten - a ritual that reflects Kerala's rich cultural heritage.
