Prepare Fenugreek Leaves

Wash fenugreek leaves thoroughly and chop them finely. Remove any thick stems. If using dried methi (kasuri methi), use only 3-4 tablespoons.

Mix Dry Ingredients

In a large bowl, combine wheat flour, besan, all spices, salt, cumin, and ajwain. Mix well to distribute the spices evenly throughout the flour.

Make the Dough

Add chopped methi leaves, curd, and oil to the flour mixture. Knead with water to form a soft, pliable dough. Cover and rest for 15-20 minutes.

Roll the Theplas

15 mins

Divide dough into lemon-sized balls. Roll each into a thin circle (about 6-7 inches). Don't worry if edges aren't perfect - that's the charm of homemade thepla.

Cook on Tawa

15 mins

Heat a tawa (flat griddle). Place rolled thepla and cook on medium heat. When bubbles appear, flip. Apply oil on both sides and press gently. Cook until golden spots appear.

Store and Serve

Stack cooked theplas and wrap in foil. They stay fresh for 2-3 days at room temperature, making them perfect travel food. Serve with pickle, curd, or tea.
