Make Filling

20 mins

Heat oil, add mustard seeds, curry leaves, green chilies, ginger, garlic. Add turmeric, then mashed potatoes. Mix well, cool and shape into balls.

Prepare Batter

5 mins

Mix besan with turmeric, salt, and baking soda. Add water to make smooth, thick coating batter.

Fry Vadas

15 mins

Dip potato balls in batter, deep fry in hot oil until golden and crispy. Drain on paper towels.

Assemble

5 mins

Slit pav, apply both chutneys, place hot vada inside. Serve with fried green chili.
