Make Filling
20 minsHeat oil, add mustard seeds, curry leaves, green chilies, ginger, garlic. Add turmeric, then mashed potatoes. Mix well, cool and shape into balls.
Prepare Batter
5 minsMix besan with turmeric, salt, and baking soda. Add water to make smooth, thick coating batter.
Fry Vadas
15 minsDip potato balls in batter, deep fry in hot oil until golden and crispy. Drain on paper towels.
Assemble
5 minsSlit pav, apply both chutneys, place hot vada inside. Serve with fried green chili.
