Prepare the Spices

Lightly crush the cardamom pods to release their seeds. Grate the fresh ginger. You can also lightly crush the peppercorns and cloves for more flavor.

Boil Water with Spices

Add water to a saucepan along with all the spices - cardamom, ginger, peppercorns, cloves, and cinnamon. Bring to a rolling boil and let it simmer for 3-4 minutes to infuse the flavors.

Add Tea Leaves

Add the loose black tea to the spiced water. Let it boil for 2-3 minutes. The longer you boil, the stronger the tea. Watch for a deep reddish-brown color.

Add Milk and Sugar

Pour in the milk and add sugar. Bring the mixture to a boil again. Once it starts rising, reduce heat and let it simmer for 2 minutes, stirring occasionally.

Strain and Serve

Strain the chai through a fine mesh strainer into cups. Serve immediately while hot. For extra froth, pour the chai back and forth between two cups.
