Prepare the Vegetables
15 minsWash and cut all vegetables. Sprinkle salt and turmeric on bitter gourd slices and let them sit for 10 minutes. Squeeze out excess water to reduce bitterness.
Fry the Vegetables
15 minsHeat mustard oil in a kadai until smoking. Fry bitter gourd until crisp, set aside. Lightly fry other vegetables in batches and set aside.
Temper the Spices
3 minsIn the same oil, add panch phoron and bay leaves. Let them splutter. Add radhuni seeds if using. Add ginger paste and saute for a minute.
Cook the Vegetables
15 minsAdd all fried vegetables except bitter gourd. Add turmeric, salt, and 1 cup water. Cover and cook on medium heat until vegetables are tender.
Add Milk and Finish
5 minsPour in milk and sugar. Simmer for 5 minutes. The gravy should be light and slightly creamy. Add fried bitter gourd on top.
Final Tempering
2 minsDrizzle ghee over the dish. Cover and let it rest for 2 minutes. Serve as the first course of a traditional Bengali meal.
